Kahii’s seasonal cocktail menu invites guests to experience tea and coffee in entirely new ways. Each drink has been crafted using seasonal Australian ingredients and rare teas and coffees from around the world, blended through a Japanese lens and delivered with quiet precision.

Each cocktail is carved around the details—from flavour balance to hand-cut ice designed to match each drink’s profile.

The cocktail menu changes every three months, with each new season offering a chance to explore different flavours, ingredients and ideas.

Acclaimed Japanese Mixologist

At the helm is Bar Manager and Creative Director Fumiaki ‘Fumi’ Michishita, whose career spans some of Japan and Australia’s most respected bars—including Bar Triad and Bar Tram in Tokyo, and most recently as Head Mixologist at sister venue Kuro in Sydney.

His signature style blends the precision of classic cocktail technique with the quiet artistry of Japanese mixology: restrained, thoughtful, and deeply intentional. He is also a specialist in the Japanese craft of ice carving, tailoring each shape and cut to suit the flavour and dilution needs of every cocktail.
